Savour the taste of tempura local reef fish, ponzu dressing and salt and pepper prawns then follow with succulent Peking styled magret duck breast with sweet potato, sundried tomato & goats cheese gnocchi, exotic mushrooms, wilted greens and star anise juice.
Your culinary journey wouldn't be complete without one of Devine's signature desserts including white chocolate panna cotta with caramelised puff sticks and raspberry caramel, or indulgent valrhona chocolate cake, chocolate ice cream, chocolate pots, chocolate crumble brandy snap and berries.

Tides Restaurant & Bar's Executive Chef, Gregory Devine is an asset in the kitchen. He teams his passion for food and wine with an impressive resume that lists past clients as Governor General Quentin Bryce, former Prime Minister Kevin Rudd and Queensland Premier Anna Bligh.
Chef Devine's menu reflects his love of local produce with dishes including fish and prawns sourced from nearby reefs as well as beef from Queensland's farms.
Before bringing his expertise to the Tides kitchen, Gregory's success has seen him travel all over Australia cooking in leading establishments including Government House, Matson Plaza Hotel Cairns, Vista International Hotel Melbourne and the Four Seasons Hotel Alice Springs.
